Summer Shrimp Cocktail

Shrimp Cocktail is a popular Mexican summer dish that my family makes often. It’s a great chilled recipe that cools you off during hot weather.

Ingredients

  • Cooked and chilled Shrimp 

  • Lime juice 

  • Chopped Onion 

  • Diced Avocado 

  • Chilled Clamato brand tomato cocktail (can also make your own with clam juice and tomato juice) 

  • Ketchup (optional) 

  • hot sauce, like Tapatio or Valentina (optional) 

  • Diced Cucumber 

  • Diced Celery (optional) 

  • Chopped Cilantro 

  • Excellent side: saltine crackers

Preparation

1. Mix all shrimp and vegetables (except avocado) into a bowl (and add salt) 


2. Mix Clamato tomato cocktail into another bowl with lime juice, cilantro, and ketchup (optional) and hot sauce (optional) 


3. Stir in clamato mixture into the bowl with the shrimp and vegetables 


4. Gently stir in avocado 


5. Cover and put in fridge for at least an hour 6. Serve with a side of saltine crackers.
