
Ingredients
3c bread flour
3t cinnamon
1/4-1/2t ground mace
1 1/2t salt
1/2t active dry yeast
3T packed light brown sugar
1 1/2c warm water
1c total of dried Cranberry, dried black currants, dried apricots, pumpkin seeds, almonds, hazelnuts, and pine nuts (can substitute with other fruits and nuts/seeds so long as the total amount is 1c)
Preparation
1. Add flour, spices, salt, and fruit/nut mix to a bowl, mix
2. In a glass container add brown sugar, yeast, and warm water. Let proof until frothing.
3. Add wet to dry and mix until a slightly tacky dough forms. If dry add 1T of water at a time. Let rest in a warm place for an hour or until doubled in size.
4. Once it is double, punch and shape it into a ball on floured parchment paper. Let rise for 25-30 minutes.
5. Place the Dutch oven in a cold oven and preheat to 450F. Once preheated, put parchment paper and dough into the Dutch oven and cover. Bake for 30 minutes. Remove the lid and bake for an additional 10 if needed. Should sound hollow when done.
6. Pull out of Dutch oven and place on a wire rack to cool before cutting.
I don't know if it's good for sandwiches but it's pretty good with butter or cream cheese!
